I make vodka and gin. Most of it goes as trade goods though. Good stuff - clean spirit and filtered rainwater. I add the gin ingredients and let it sit for a few weeks. Makes a very nice gin with a golden tint. Keeps my wife happy. I just drink the vodka.

finocchietto is the name of the drink made from it.
It’s also used in absinthe. Now that’s what I’m keen to try and make.
