Mike's Spicy THC corn recipe

Ingredients:

6 to 8 medium ears sweet corn, husks removed
1/2 cup sour cream
1/2 cup infused mayonnaise
1/2 cup chopped cilantro
1 clove garlic, minced
1/4 teaspoon ground chipotle pepper, to taste
2 teaspoons finely grated lime zest, from 1 lime
2 tablespoons lime juice, from 1 lime
1/2 cup cotija cheese ( you can bake feta with some salt for about 30 min at 325 as a good subsitute)
Lime wedges, to serve

Directions:

Heat a gas or charcoal grill to 400F:

In a bowl, whisk together the sour cream, infused mayonnaise, cilantro, garlic, chipotle pepper, lime zest and lime juice. Taste and season the mixture with salt if needed. Set aside.

Place the husked corn directly onto grill grates. Grill the corn for about 3 minutes, undisturbed, or until kernels begin to turn golden brown and look charred. Turn over and repeat. When all sides are browned, remove from the grill onto a plate.

Using a brush or a spoon, coat each ear of corn with the cream mixture. Sprinkle with crumbled cheese. Sprinkle with additional chipotle pepper, if desired. Serve immediately with extra lime wedges.

I thought there was no way I could like Elote more than I already do, but you've done it 7EG! As with most things in life, cannabis makes everything better...

Now we just need Rosin Birria and Keif Michelada recipes.

i make my own mayo & it's mostly oil so i'm gussing you infuse the oil first then make the mayo
i use a 50/50 mix of EVO & MCT in the mayo i make , you could prob swap the MCT for avocado oil which is prob a good oil to infuse
